Strawberry Sandwich Cupcake Recipe
I love this strawberry sandwich cupcake recipe. It’s also a winner with the kids! Simple, includes actual fruit, and no decorating skills are needed. This is my kind of recipe.

Strawberry Sandwich Cupcakes Ingredients:
- 1 box of white cake mix
- 3 egg whites
- 1 ¼ cup water
- 3 Tablespoons unsalted butter melted
- 1 teaspoon vanilla extract
- 2 teaspoons another extract of your choice Almond, lemon, and strawberry are good choices
Ingredients For Strawberry Sandwich Filling
- 2 cups strawberries diced
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- ¼ cup powdered sugar plus a little extra for dusting the tops of the cupcakes
How To Make Strawberry Sandwich Cupcakes
Preheat your oven to 350°F, and line your muffin tin with paper cupcake liners.
In a large bowl, combine the box of cake mix, water, egg whites, extracts, and your butter. Beat with your mixer until it’s fully combined.
Fill the cupcake liners with batter about 2/3 of the way full.
Bake for 15 minutes or until an inserted toothpick comes out clean from the center.
Remove the cupcakes and allow them to cool on a wire rack.
For The Strawberry Sandwich Filling
In another large bowl, use your mixer to whip the heavy cream, vanilla extract, and the 1/4 cup of powdered sugar until heavy peaks form.
Fold the diced strawberries into the mixture.
How To Assemble The Strawberry Cupcake Sandwiches
Cut each cupcake in half.
Add the cream to the bottom pieces of cupcake either by spreading it, or you can pipe it on with a big jumbo icing tip.
Put the top of the cupcake back on each cake.
Sprinkle with powdered sugar for some beautiful cupcakes that really take no decorating skills whatsoever!
